Shrimp Walnuts & Mayo
--------------------------------------------------------
shrimp
1 kilo shrimp, shelled and devein (don't cut to deep!)
4 egg whites
1/2 cup of cornstarch
salt and pepper
mayo
1 pouch real mayonaise (it would be better to use japanese mayo. WAY BETTER)
1/4 cup of condensed milk (this really depends on how sweet you want the sauce to be)
1/2 teaspoon garlic salt
pepper and salt
juice of lemon OR calamansi
walnuts
1/3 cup crushed walnuts
1 cup white sugar
--------------------------------------------------------
1. mix all the ingredients for the "mayo sauce" in a bowl. if desired, chill for a few minutes.
2. heat oil.
3. mix your egg whites with cornstarch, salt and pepper. you should be able to produced a white paste-like mixture. adjust the measurement of the cornstarch if the consistency is still foamy and watery. drench the shrimp on the mixture and deep fry. DO NOT OVERCOOK.
two minutes will suffice.
4. on a separate pan. place sugar and walnuts over medium-fire. stir. wait for sugar to coat the nuts. DO NOT BURN THE SUGAR.
ASSEMBLE: Mix the nuts with the "mayo-sauce" and then fold-in the fried shrimp.
SERVE RIGHT AWAY! (:
bon appetito!
